how was your halloween? did you celebrate at a large party? trick or treat with kiddos? stay home and watch scary movies?

bet you didn't drink homemade butterbeer...

i did!

serves 6-8

6-8 TBS of butterscotch sauce (homemade is best)

3 cups apple cider

1 cup bourbon whiskey (optional for some. not for me.)

2 cups ginger beer (or ginger ale)

whipped cream for garnish

golden decorating sugar sprinkles (found in the baking aisle) for fun

-heat cider, bourbon and butterscotch syrup in a medium saucepan until the butterscotch dissolves. Once the mixture is steaming hot, remove from heat and and stir in ginger beer. Serve in mugs and garnish with all the whipped cream and sprinkles your heart desires

homemade butterscotch sauce

4 TBS salted butter

3/4 cup light-brown sugar

2 TBSplus 1/4 cup heavy whipping cream, divided

1 tsp vanilla extract

-in a small saucepan, add butter and sugar over medium heat. when butter is melted, whisk together and then whisk in the 2 TBS heavy cream. bring to foamy boil and cook for 4 mins, whisking occasionally, until mixture deepens in color. then turn off heat and whisk in remaining 1/4 cup heavy cream, then add vanilla extract. finally, store in an 8-oz mason jar in the fridge, where it will keep for 2 weeks.

i spent my halloween with my dear friend, amanda. we had a harry potter marathon, drank butter beer, munched on caramel apples, and ate far too much candy. and we had a sleepover too, of course. joe was busy gigging (as per usual) but we all managed to get in our annual halloween viewing of hitchcock's rear window after he came home.

ever since i was in middle school, my favorite memories of halloween were always the ones where i watched old scary movies with friends and pigged out on sweets. (i have a terrible sweet tooth.) i love continuing this tradition as i get older, with friends and my new husband. this time last year, joe and i signed the lease on this apartment and we had our first halloween in our dream apartment. my, my! time! how it flies!

i'm thankful for dear friends that are in the business of making great memories.
